Potato Leek and Celery Soup

This Potato Leek and Celery Soup will serve 4 people and is Slimming World friendly.

Spray a large pan with the low calorie cooking spray and place the pan on a medium heat.
Sweat down (lightly cook without colouring until softened) for a few minutes 1 large sliced onion, 3 celery sticks chopped, and 3 leeks leek chopped.
Add 1 teaspoon of mixed herbs.
Add 2 sliced garlic cloves and continue to sweat down.
Add 1 kilo of potatoes chopped in to 2 cm cubes and continue to cook for a few more minutes.
Add 25g each of barley, rice and spaghetti and mix in to the vegetables to absorb and liquid in the pan.
Season with 1 vegetable oxo, salt and pepper.
Add enough boiling water to cover the ingredients and bring to the boil before continuing a slow simmer.
Add an additional teaspoon of herbs.
Cook until the potatoes are well softened.
Allow the soup to rest for 10 or 15 minutes off the heat.
